Ingredients
1½ lb 93–97% lean ground turkey
1 can (15 oz) chickpeas, drained and rinsed
1 medium red onion, diced
1 zucchini, diced
1 red bell pepper, diced
2 cups baby spinach
2 cloves garlic, minced
1½ tsp ground cumin
1 tsp smoked paprika
½ tsp ground coriander
¼ tsp cinnamon (optional but recommended)
Salt & black pepper to taste
½ cup low-sodium chicken broth
1 tbsp tomato paste
1 tsp olive oil
Fresh parsley or dill for garnish
Directions
Sauté Aromatics
Heat olive oil in a large skillet over medium heat. Add onion and cook 3–4 minutes until soft. Stir in garlic and spices; toast 30 seconds.Brown the Turkey
Add ground turkey. Cook 6–8 minutes, breaking it apart, until fully cooked and lightly browned.Add Vegetables & Chickpeas
Stir in zucchini, bell pepper, chickpeas, tomato paste, and broth. Simmer 6–8 minutes until vegetables are tender and sauce slightly thickened.Finish with Greens
Fold in spinach and cook just until wilted (1–2 minutes). Season to taste.Serve
