Honey garlic salmon is one of those recipes that looks impressive and takes about 20 minutes. Fresh cucumber, creamy avocado, and a simple soy-honey glaze make this one feel like a restaurant bowl without the price tag. It's the kind of meal that bridges the gap between summer and fall perfectly.

Ingredients
For the salmon:
- 4 salmon fillets (6oz each)
- 3 tbsp low sodium soy sauce
- 2 tbsp honey
- 3 cloves garlic, minced
- 1 tbsp rice vinegar
- 1 tsp sesame oil
- 1 tbsp olive oil
For the bowls:
- 2 cups jasmine rice, cooked
- 1 English cucumber, thinly sliced
- 1 avocado, sliced
- 2 green onions, sliced thin
- 1 tbsp sesame seeds
- Lime wedges for serving
Directions
- Whisk together soy sauce, honey, garlic, rice vinegar, and sesame oil in a small bowl. Set aside.
- Heat olive oil in a skillet over medium-high heat. Place salmon fillets skin-side up and cook 3-4 minutes until golden. Flip and cook another 2-3 minutes.
- Pour glaze over the salmon and let it simmer and caramelize around the fillets for 1-2 minutes, spooning it over the top as it reduces.
- Build your bowls: rice base, sliced cucumber, avocado, and salmon on top. Spoon any remaining glaze over everything. Finish with green onions, sesame seeds, and a squeeze of lime.
Meal Prep & Storage
Prepping ahead: The glaze can be made up to 3 days in advance and stored in the fridge. Cook the rice ahead and store separately. Slice cucumber and store in an airtight container - it holds up to 3 days in the fridge.
Storing components: Keep salmon, rice, and toppings in separate containers. Avocado should be sliced fresh daily to avoid browning. Salmon keeps well for up to 3 days in the fridge.
Reheating: Reheat salmon gently in a skillet over low heat for 2-3 minutes or in the microwave for 60-90 seconds covered. Avoid overheating - salmon dries out fast. Rice reheats well with a small splash of water in the microwave for 90 seconds.
Batch tip: Make a double batch of the glaze and use it on chicken or shrimp later in the week. It works on virtually anything and takes the thinking out of mid-week meals.
