High-Protein Taco Bowl


This simple, high-protein taco bowl features seasoned lean ground beef, mixed with taco sauce and Greek yogurt for creaminess. Served over rice, it's customizable with salsa, extra Greek yogurt, crisp romaine, and your favorite light toppings.


Need fewer calories? Split this into 3 or 4 meals or swap 50% of the rice for more veggies or cauliflower rice.

Ingredients

  • 1 lb 90-94% lean ground beef
  • 2 servings packets of taco seasoning
  • 1/2 cup taco sauce
  • Salsa of choice
  • 150g Greek yogurt (I use Fage Total 0%)
  • 2 cups of rice (Cooked yourself or instant)

Directions

  1. Cook ground beef on medium heat in a pan, sprinkling taco seasoning evenly as it browns.
  2. After it's finished cooking (~4-5min), turn off heat and add taco sauce and Greek yogurt. Amount of taco sauce is up to preference, I use ~1/4 cup per pound of meat.
  3. Mix!
Assembly
  • Add rice to a bowl or meal prep container.
  • Add taco meat in bowl.
  • Add salsa, extra few spoonfuls of Greek yogurt on top (optional), chopped romaine lettuce, any other light veggies and sauces.
