Sausage, Egg, & Cheese Breakfast Crunch Wraps

Ingredients (makes 4 wraps)

  • 4 large flour tortillas (35 carbs per)
  • 1 large flour tortillas cut into 4
  • 8oz 96/4 lean ground beef
  • 8oz reduced fat turkey sausage
  • 600g egg whites
  • Everything Bagel seasoning
  • 70g 2% Colby Jack cheese
  • 1/2 packed taco seasoning
  • 12 tortilla chips (rec. Santitas brand)
  • 80g plain non-fat Greek yogurt
  • 40g shredded lettuce
  • 80g Pico*

*Ingredients for Pico

  • 4 Roma tomatoes
  • 1 jalapeno seeded and minced
  • 2 limes, juiced
  • 2 clove garlic, minced
  • 1 pinch sea salt
  • 1 pinch of pepper
  • 1/2 tsp red onion, minced
  • 16g cilantro, minced

Directions

  1. Add to a pan preheated on a 7/10 heat your 8oz of 96/4 lean ground beef and 8oz reduced fat turkey sausage. Season with 1/2 the taco seasoning packet. Then once ground beef is almost done, add your 2% colby jack cheese. Mix til you have a cheesy ground beef. Set to the side in a bowl.
  2. Then keep same pan preheated on a 7/10 heat. Add 150g egg whites and sprinkle everything bagel seasoning on top. Add cover on top of pan and cook till egg whites are solid. Repeat for 4 of these. I took them off the pan and add to a plate with a paper towel separating each one to help them from sticking to each other.
  3. Now it's time to put together the crunch wraps. First, take one of the large flour tortillas into 4 pieces as if you were slicing a pizza into 4 slices. These will be important for closing the bottom of the crunchwrap because they are BIG.
  4. Now take one of your egg whites and lay flat. Add 1/4th of our cheesy meat mixture to the middle along with 7g of 2% colby jack cheese. Wrap the egg whites like a crunch wrap. Repeat for all 4.
  5. Now lay your flour tortilla flat and add your egg white crunch wrap facedown in the middle. Then add in this order: 3 tortilla chips, 20g plain non-fat Greek yogurt, shredded lettuce, and pico. Add one of the sliced tortillas to the top of the pico. Press it down.
  6. Now carefully fold up your crunch wrap. It's ok if you get a tiny split in the tortilla. It won't matter. Repeat for the rest of your crunch wraps.
  7. Now add these to the air fryer and spray tops with non stick cooking spray. Sprinkle some everything bagel seasoning on top. Air fry on 400 degrees F for 5-6 minutes or until golden. Then slice up and enjoy!

* And for meal prep, wrap up and add to freezer. Just reheat in the air fryer for 4-5 minutes on 400 degrees F
