2 salmon fillets (150g each)
1 medium sweet potato, cubed (200g)
2 cups spinach (60g)
½ avocado, sliced (50g)
½ cup cooked quinoa (90g)
1 tsp olive oil (5g)
1 tsp lemon juice
Salt and pepper to taste
Directions
- Preheat oven to 400°F (200°C). Toss cubed sweet potatoes in olive oil, salt, and pepper; roast for 20 minutes until tender.
- Season salmon with salt and pepper, then grill or pan-sear for 4–5 minutes per side until cooked through.
- Lightly sauté spinach in a dry pan or steam for 1–2 minutes.
