Ingredients

  • 2 lbs lean ground beef (90/10)
  • 2 cans (15oz each) kidney beans, drained and rinsed
  • 1 can (15oz) black beans, drained and rinsed
  • 1 can (28oz) crushed tomatoes
  • 1 can (14oz) diced tomatoes
  • 1 small yellow onion, diced
  • 4 cloves garlic, minced
  • 1 jalapeño, minced (optional)
  • 2 tbsp chili powder
  • 1 tsp cumin
  • 1 tsp smoked paprika
  • 1 tsp oregano
  • ½ tsp cayenne pepper
  • 1 tbsp olive oil
  • Salt and pepper to taste

Toppings:

  • Shredded cheddar cheese
  • Plain Greek yogurt (in place of sour cream)
  • Sliced green onions
  • Pickled jalapeños

Directions

  1. Heat olive oil in a large Dutch oven or heavy pot over medium-high heat. Add onion and cook for 3–4 minutes until softened. Add garlic and jalapeño and cook one more minute.
  2. Add ground beef and cook through, breaking apart as it browns. Drain any excess fat.
  3. Stir in chili powder, cumin, smoked paprika, oregano, and cayenne. Cook for 1–2 minutes until fragrant.
  4. Add crushed tomatoes, diced tomatoes, and all beans. Stir to combine and bring to a simmer.
  5. Reduce heat to low, cover partially, and simmer for 45 minutes to an hour — stirring occasionally. The longer it goes the better it gets.
  6. Taste and adjust seasoning before serving. Top with cheese, Greek yogurt, green onions, and jalapeños.
