Ingredients
For the Chicken:
1.5 lbs (680g) chicken breast, cut into bite-sized chunks
1 tbsp olive oil
1 tbsp honey
1 tsp chipotle powder (or smoked paprika for mild heat)
½ tsp garlic powder
½ tsp onion powder
½ tsp salt
¼ tsp black pepper
Juice of ½ lime
For the Sweet Potato Wedges:
2 medium sweet potatoes, cut into wedges
1 tsp olive oil
½ tsp smoked paprika
½ tsp salt
For Garnish:
Chopped cilantro
Optional dipping sauce: Greek yogurt + lime juice + pinch of chili powder
Directions
Preheat the Air Fryer:
Set to 400°F (200°C) for 5 minutes while you prep.
Marinate the Chicken:
In a bowl, toss chicken with olive oil, honey, chipotle, garlic powder, onion powder, salt, pepper, and lime juice. Let sit for 10 minutes while you prep the potatoes.
Prepare the Sweet Potatoes:
Toss wedges with olive oil, smoked paprika, and salt.
Air Fry in Batches:
Sweet Potatoes: Air fry for 14–16 minutes, shaking halfway, until crisp and golden.
Chicken Bites: Air fry for 10–12 minutes, shaking halfway, until cooked through (internal temp 165°F).
Assemble & Serve:
Serve chicken bites and sweet potato wedges side by side. Drizzle a bit of lime or yogurt sauce on top and sprinkle with cilantro.
