Ingredients

  • 2 salmon fillets (150g each)

  • 1 medium sweet potato, cubed (200g)

  • 2 cups spinach (60g)

  • ½ avocado, sliced (50g)

  • ½ cup cooked quinoa (90g)

  • 1 tsp olive oil (5g)

  • 1 tsp lemon juice

  • Salt and pepper to taste

Directions

  1. Preheat oven to 400°F (200°C). Toss cubed sweet potatoes in olive oil, salt, and pepper; roast for 20 minutes until tender.
  2. Season salmon with salt and pepper, then grill or pan-sear for 4–5 minutes per side until cooked through.
  3. Lightly sauté spinach in a dry pan or steam for 1–2 minutes.
  4. Assemble the bowl: quinoa base, topped with sweet potatoes, spinach, salmon, and avocado.
  5. Finish with lemon juice and serve warm.
