Ingredients

Chocolate Protein Pudding

  • 1 large ripe avocado
  • 1 cup 2% or whole milk Greek yogurt (creamier for indulgence)
  • 1 scoop chocolate protein powder
  • ¼ cup cacao powder
  • ¼ cup milk (dairy or almond)
  • 3 tbsp maple syrup or honey (slightly higher for dessert feel)
  • 2 tsp vanilla extract
  • Pinch of salt

Roasted Strawberries

  • 2 cups strawberries, sliced
  • 2 tbsp balsamic vinegar
  • 1 tsp avocado oil
  • Optional: 1 tsp maple syrup for extra jamminess

Toppings

  • ¼ cup pistachios, chopped
  • Fresh mint
  • Optional indulgence add-ons:

Directions

1. Make the Pudding

Blend all pudding ingredients until ultra smooth and mousse-like. Chill at least 20–30 minutes.

2. Roast the Strawberries

Bake at 375°F (190°C) for 20 minutes until soft and jammy. Let cool.

3. Assemble Snack Cups

In 6 small containers or jars:

  1. Layer chocolate pudding
  2. Add roasted strawberries
  3. Sprinkle pistachios
  4. Optional: add chocolate shavings or granola

Repeat layers if you want a parfait look.

4. Chill
